Asafoetida is an Indian herb derived from the gum of a variety of giant fennel. It's known for its strong and pungent smell and ability to mimic the savoury flavours of garlic in cooking. Use a very small quantity (just a pinch is enough) to flavour curries, stews and dahl or add to a homemade spice blend. Suitable for people following FODMAP diet or those with sensitivities to garlic/onion.
