Black barley is the only grain that can go from farm to pantry without any processing at all. This is because the entire outer bran it edible. This adds a huge amount of flavour and fibre! It's dark colour make it rich in antioxidants, as well as vitamin C and calcium. When cooked it is chewy and plump and can be used in stuffings, soups, salads, and more. To cook, use 3 parts water to 1 part barley and cook on a low heat for about 1.5 hours. Store dried barley in an airtight container and keep in a cool, dry place.
