Haricot, also known as navy beans, are an Australian grown bean that is commonly used to make baked beans! They are high in dietary fibre, protein, and minerals. They are said to help lower cholesterol and make for an excellent vegetarian source of protein. When cooked they are smooth and soft. They are perfect for purees, soups, stews and of course, baked beans. Soak the beans for at least 6 hours before cooking will cook in about 2 hours. Store dried beans in an airtight container and keep in a cool, dry place.
