Beautiful black beluga lentils get their name from their lovely caviar look. They are densely nutritious and high in fibre, protein, and antioxidants, making them a fantastic vegetarian alternative. Unlike other lentils, they do not get mushy when cooked and hold their shape and have a little 'al dente' texture. They work fantastically in great in soups, salads, and curries. As they hold their shape, they are also fantastic to precook and keep in the fridge for a few days and add to most meals for a vegan protein kick. While soaking black lentils will quicken cook time, it is not necessary and they will cook in about 45 minutes making them a great quick option. Be sure to rinse the lentils before cooking and use three times more water to lentils. Store dry lentils in an airtight container and keep in a cool, dry place.
