Cashews are high in copper and also contain zinc, selenium, magnesium and manganese. Cashews contain lots of heart-healthy monounsaturated fats and essential fatty acids that help to regulate cholesterol. A small handful of cashews holds all your daily recommended intake of copper. Can be used to make cashew milk, cashew cheese or raw treats. To do this the cashews need to be soaked for at least 5 hours. To make milk you can blend soaked cashews with water and strain using a nut milk bag using as much water as you would like for your desired creaminess. Cashew cheese is a fantastic vegan alternative and usually contains soaked cashews, nutritional yeast and a little lemon, garlic and seasonings. This could be eaten as a dip, or added to sandwiches and pasta sauces! Kindly remember to store cashews in a cool, dry place, in an airtight container.
