Wholemeal flour retains some of the outer bran resulting in a more robust flavour and texture. It is a high protein wheat flour that is best used for producing high-quality bread and pastries. This flour contains 13% protein. The protein in the flour reacts with yeast and sourdough starter culture during the fermentation process. This results in bread with a better rise.
