Banana & Walnut Bread

A deliciously nutty, low gluten, soft banana bread.


Ingredients
  • 3 medium, ripe bananas
  • ¼ cup walnut oil / melted coconut oil
  • ¼ cup pure maple syrup
  • 1 egg / flax egg (1 tbsp flaxseed meal mixed with 2 tbsp warm water set for 10 mins)
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups oat flour
  • ¾ cup walnut meal/ almond meal/ pumpkin seed meal/ or black sesame flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine Himalayan sea salt
  • 1 cup chopped walnuts + extra for topping

Directions

Preheat the oven to 175C. Line a loaf pan and set aside. Mash bananas until smooth in bowl or food processor. Add oil, maple, egg and vanilla. Whisk until well incorporated. Add all dry ingredients and mix until just incorporated, making sure no flour patches remain. Fold in chopped walnuts. Pour batter evenly into prepared pan, cut a slit slightly off centre down the loaf and sprinkle with chopped walnuts, lightly pressing to secure. Bake for approx 55-65 mins or until toothpick comes out clean.
