Chewy Vegan Almond Cookies

Enjoy as they are or use to make ice cream sandwiches!


Ingredients
  • 2 cups blanched almond meal
  • 2 tbsp almond butter
  • 4 tbsp maple syrup
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp wattleseed
  • a pinch of himalayan fine salt

Directions

Preheat oven to 175 C. Mix all dry ingredients together; almond meal, cinnamon, salt and wattleseed. Then add the almond butter, vanilla and maple syrup and mix together well with your hands. Roll into balls then flatten into cookie shape. They won’t change shape in the oven. If making 6 large cookies bake for 12-14 mins, or if you make smaller ones cook for less time. Then allow to cool on the baking tray for at least 10 mins before transferring to a wire rack. Enjoy as they are or use to make ice cream sandwiches!
