Chickpea Pancake

A two ingredient pancake that is the perfect, crispy, base for salads and eggs.


Ingredients
  • 1 cup besan flour (chickpea flour)
  • 1 cup water

Directions

To make the pancake simply whisk together the flour and water and leave in the fridge for at least 2 hrs. Then gently remove the foam off the top and give a good stir. Heat a drizzle of oil of your choice in pan on high heat, add as much batter as you like to whatever thickness you prefer and rotate pan for even coverage. Flip when golden. Serve with your favourite toppings like salad, nuts, seeds, eggs, and hummus.
