This coconut bacon is a great smoky and sweet topping to add to your favourite salads, pasta or toast. Quick and easy to make - and you can store it in the pantry for up to a week.
Preheat oven to 160°C. Mix together all ingredients except coconut flakes in a bowl. Add in coconut flakes and coat evenly. Spread evenly on a lined baking tray and bake for 15 minutes or until golden. Cool and store in an airtight jar for up to a week. Serve on top of salads, pasta or with roasted vegetables.
