Crispy Mexican Jackfruit

Ingredients
  • 2 cans of organic BPA free jackfruit
  • 1/2 tsp smoked paprika
  • 1 tsp of Screaming Seeds Taco Seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • chilli flakes to taste
  • a small bunch of chopped coriander stalks and leaves to garnish
  • 1/4 tsp ground coriander
  • 2 chopped spring onions
  • 1/2 tbsp honey or coconut nectar
  • 1 tbsp of nuilife coconut sweet chilli
  • pair with tacos, avocado, sliced red chilli and lime to serve

Directions

Start by adding your spices, coriander stalks and spring onion to a pan on medium heat with a good amount of olive oil. Fry gently until fragrant then add your jackfruit and cook gently for approx 15-20 mins until soft and tender. Then add the coconut sweet chilli and honey and stir in creating a nice caramelisation. Once cooked serve with your tacos, diced mango, chopped pickles, sliced avo, sliced red chilli, coriander and a squeeze of lime. We reccomend serving with our recipe for carrot tacos!
