Freezer Cookie Dough

These freezer cookie dough bites are super simple with only four ingredients they are the perfect afternoon treat, dessert or you could even add them to a breakfast smoothie or oat bowl.   • 1/2 cup of chickpeas canned/cooked
  • 1/3 cup peanut butter
  • 1/4 cup melted coconut oil
  • 1/4 cup dark chocolate


Add chickpeas, peanut butter and coconut oil into a food processor/blender and blend until smooth. Add the chocolate and pulse to break into chunks. Use an ice cream scoop or dessert spoon to create balls or place into a tray and put in the freezer to set for 30 mins. Store in the fridge for up to 5 days.
