Green Detox Soup

An easy to whip up soup full of greens.


Ingredients
  • 2 tbsp olive oil
  • 2 leeks (white part only)
  • 2 garlic cloves
  • 2 zucchinis
  • 1 small celeriac
  • 2 celery sticks
  • 3 cups chopped kale
  • 1 head of broccoli
  • 750ml organic chicken bone broth (of vegetable stock)
  • 1/4 cup parsley
  • coconut yoghurt (optional)

Directions

Saute leeks in olive oil, then add garlic and cook for a couple of minutes before adding the rest of the chopped veggies and season. Cook until starting to soften, then add the broth/stock and simmer for approx 20 mins or until all the vegetables are soft. Blend until smooth. Serve with a small dollop of coconut yoghurt if you like and some salt and pepper. You can also have it with some crunchy toast of your choice.
