Jackfruit Burgers with Avocado Slaw

From the bbq sauce to the buns this recipe makes it all. A totally natural plant based burger!


Ingredients
  • For the bbq sauce
  • 2 cups tomato passata
  • 2 tbsp tomato paste
  • 1/3 cup apple cider vinegar
  • 2 tbsp maple syrup
  • 1/4 cup molasses
  • 2 tbsp worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp dijon mustard
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • freshly cracked black pepper
  • 1-2 tsp liquid smoke
  • 1/8 tsp cayenne pepper
  • For the bbq jackfruit
  • 2 cans of young jackfruit in water
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp chilli flakes
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 cup of bbq sauce
  • For the avocado slaw
  • 2 cups shredded green cabbage
  • 1 avocado
  • 1 tbsp maple syrup
  • juice of 1 lemon
  • 1 tbsp natural coconut yoghurt
  • salt and pepper to taste
  • For the buns
  • 3 tbsp flaxseed meal mixed with 1/2 cup + 1 tbsp water set for 10 mins
  • 1 1/4 cups blanched almond meal
  • 1/3 cup flaxseed meal
  • 1/2 cup psyllium husk powder (or psyllium husk blended to make powder)
  • 1 tsp salt
  • 2 1/2 tsp bi carb soda
  • 1 1/4 tsp cream of tartar
  • 1 1/4 cup water
  • 2 tbsp nutritional yeast
  • 2 tsp activated charcoal powder
  • sesame seeds to garnish

Directions

For the BBQ sauce add all ingredients into a pot on a low heat and simmer for about 20mins. Then drain the jackfruit, remove seeds, shred and squeeze out any excess water. Add to a hot pan with a drizzle of oil and cook until starting to brown, add 1/4 cup water and cook until starting to brown again. Add spices and cook for a few mins, then add the bbq sauce and cook until desired consistency, about 15 mins. For the avocado slaw, mash the avocado then mix in the rest of the ingredients. To make the buns, preheat oven to 175C and line a baking sheet. Whisk the dry ingredients together then add the flaxseed meal and water combination and mix well. Boil the water, then slowly pour over dough mixture while stirring until well combined. Let dough rest for 5 minutes. Form dough into 4-6 equal rolls and place on baking sheet. Sprinkle with sesame seeds. Place in oven for 50 minutes. Allow to cool before serving. To serve, toast the buns, then hollow them out a little by removing a chunk from top and bottom. Add extra bbq sauce. Then fill with jackfruit and top with slaw.
