Lentil Bolognese

Feed your family with a delicious and nutritious dinner for under $25! This lentil bolognese is super budget-friendly and still packed with flavour thanks to our Scoop Napolitana sauce. It's also a perfect recipe to batch cook and freeze if you love meal prepping.

Ingredients
  • 1 cup red lentils uncooked
  • 1-2 bunches Scoop spaghetti
  • 1 brown onion
  • 150g mushrooms
  • 1 carrot
  • 1-2 cloves of garlic
  • 2 tsp mixed herbs
  • 1 jar Scoop Napolitana sauce
  • Olive Oil for cooking
  • Salt & pepper to taste

Directions

Soak your lentils overnight in some water and a pinch of salt (you can skip this step but it does help shorten the cooking time). Dice the onion, mushrooms, and carrot and set aside. In a pan on medium heat add your olive oil, garlic, and onion and saute until the onions are translucent. Add in the vegetables and saute until cooked through. Pour in your Scoop Napolitana, lentils, and mixed herbs, and cook for 15-20 minutes until the lentils are cooked through. In the meantime cook the pasta by boiling for 8-10 minutes. Pour the pasta into the Lentil Bolognese mixture and stir through. Serve with parmesan cheese and enjoy!
