Mango Sago Pudding

If you want a dessert that feels like summer then look no further than this delicious Mango Sago Pudding. With a delicious mango puree made by rehydrating our Australian dried mango slices!

Ingredients
  • 1/2 cup tapioca pearls
  • 1/2 cup coconut cream + 2 tsp
  • 2 tsp liquid sweetener (honey, maple syrup or agave)
  • 1 tsp vanilla extract
  • 70g dried mango
  • Coconut flakes to top

Directions

Overnight soak your mango in some water to rehydrate it (leave aside 1-2 slices to garnish). Bring a pot of water to a boil and cook your tapioca until clear. Drain the tapioca and rinse with cold water. Heat together the ½ cup coconut cream, liquid sweetener, and vanilla with the tapioca until combined. Set in the fridge for 2 hours. Pour the mango and a dash of the soaking water into a blender and combine with 2 tsp coconut cream. Layer your tapioca and mango puree into a cup. Top with dried mango and coconut flakes.
