Pancake Tacos

Change up your morning pancakes by flipping them into tacos! Just cook the pancakes as normal then stuff with your favourite fillings. The perfect weekend breakfast indulgence.

Ingredients
  • For the pancakes
  • 1 ripe banana
  • 1 cup milk of choice
  • 2 cups rolled oats
  • 2 eggs
  • 1 tsp baking powder
  • For the filling
  • Coconut yoghurt
  • Fresh berries
  • Melted chocolate

Directions

Blend pancake ingredients together in a blender or food processor until smooth. Oil a pan with coconut oil and heat to medium. Spoon the mixture into the pan and cook on both sides until golden (wait for bubbles to appear before flipping first time) To assemble the tacos spoon in yoghurt, add cut up berries and drizzle with melted chocolate
