Pink Pitaya Chia Pudding

A beautiful, simple recipe that makes a perfectly pink pudding!


Ingredients
  • 1 1/2 frozen pink pitaya
  • 1 cup raspberries (fresh or frozen)
  • 1/2 cup milk of your choice
  • 1/4 cup organic chia seeds
  • 1-2 tbsp rice malt syrup/ maple syrup/ raw honey
  • coconut yoghurt & granola to serve

Directions

Blend fruit, milk and sweetener until smooth. Add chia seeds and mix well. Add to jars or bowls and place in fridge to set overnight. In the morning serve with yoghurt and granola and some fresh fruit.
