Shiitake Black Bean Burgers

The texture is seriously the best! It holds together really well, as a burger should, and tastes divine!!


Ingredients
  • Burgers
  • 2 cups of dried shiitake mushrooms (soaked in boiling water 10 mins)
  • 1/2 red onion chopped
  • 5 cloves of garlic
  • 1/2 cup raw or activated almonds
  • 1/2 cup sunflower seeds
  • 1 tsp cumin powder
  • 1/2 tsp crushed chilli or chilli powder
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • A good crack of black pepper
  • 1/2 cup parsley or coriander leaves
  • 1-2 tsp olive oil
  • 1 cup cooked black beans
  • 2 tsp psyllium husks
  • 1 tbsp flaxseed meal
  • 2 tbsp almond meal

Directions

1. Prep mushrooms and leave to soak. 2. Finely chop onions and place in mixing bowl. 3. Add the garlic, almonds, sunflower seeds, chilli, paprika, salt and pepper and blend into a crumb. Next add the parsley or coriander and olive oil and blend to bring together. 4. Add to your mixing bowl with the onion. 5. Fry up your shiitake mushrooms in a splash of olive oil until starting to golden. 6. Then blend them in your food processor until finely chopped. Add black beans and 2 tbsp water and blend until smooth, then add mix to your bowl. 7. Finally add psyllium, flaxseed meal and almond meal into your mixing bowl and everything together well with your hands and shape into 4 patties. To cook them you can grill until golden on each side, approx 10 mins on either. You can bake at 175C for 20-30 mins, or gently fry in some coconut oil or ghee until golden. I served with a homemade gluten free bun, homemade smokey bbq sauce, fresh coleslaw with red cabbage, carrot and vegan aoli, carrot bacon, fresh spinach and some homemade crispy rosemary chips. Nourishing and delicious!!
