A warming, savoury breakfast or lunch option this simple congee is easy to make and packed with nutrition. The soup base is made using bone broth, which is high in collagen helping with skin and gut health. We topped ours with Gomasio a Japanese seasoning (you can find that recipe on here too) for an extra umami hit!
Cook the sushi rice according to your preferred method. When the rice is almost done, in a pot heat together the bone broth, dashi and shiitake mushrooms. Add to a bowl sushi rice and Asian greens. Pour over the warm soup mixture. Top with a boiled egg, sprinkle with gomasio (see our recipe for how to make) and drizzle with toasted sesame oil. Serve warm.
