Toasted Amaranth Porridge

Enjoy a new type of porridge with so many delicious toppings.


Ingredients
  • 1/2 cup amaranth grain
  • 1 1/3 cups nut milk
  • 1 tbsp honey/ coconut nectar
  • 1 tsp vanilla extract
  • chia jam, cacao nibs, almond butter, nut milk, and toasted coconut to serve

Directions

Start by adding your amaranth to a pot on medium-high heat and stir continuously. They will start to pop, so keep stirring. Once at least 1/2 have popped, add your milk, honey and vanilla, and cook stirring constantly until smooth and creamy. Serve your porridge with a splash of fresh nut milk and anything else you like.
