Tomato & Chickpea Bruschetta

A deliciously simple canapé or quick lunch option. The perfect combination of freshness and salty, umami flavours.

  • 1 large tomato diced
  • 1/3 cucumber diced
  • 1/2 cup cooked chickpeas
  • 1 cup chopped parsley
  • 3 tbsp extra virgin olive oil + extra for cooking
  • Regular or vegan mayonnaise to spread
  • 1 baguette
  • Salt and pepper to taste
  • Optional: goats cheese/feta


Mix together in a bowl the tomato, cucumber, chickpeas and parsley with olive oil and salt + pepper. Slice the baguette into 4 pieces and cut those in half lengthwise. Toast in a pan with olive oil until golden. Spread the mayonnaise on both slices of bread. Top with 2-3 spoonfuls of the chickpea mix. Optional to crumble over goats cheese/feta.
