Mix together in a bowl the tomato, cucumber, chickpeas and parsley with olive oil and salt + pepper. Slice the baguette into 4 pieces and cut those in half lengthwise. Toast in a pan with olive oil until golden. Spread the mayonnaise on both slices of bread. Top with 2-3 spoonfuls of the chickpea mix. Optional to crumble over goats cheese/feta.
