Vanilla and Cinnamon Protein Pancakes

These pancakes are a great way of getting protein in the morning, as well as good dose of vitamin E from the almond butter and fiber, potassium & more from the bananas!


Ingredients
  • Pancakes
  • 3/4 cup buckwheat flour
  • 1/4 cup @bareblends vanilla & coconut plant protein
  • 1 cup nut milk
  • 1 organic free range egg/chia egg
  • 1/4 cup maple or coconut sugar
  • 1/2 cup coconut yoghurt
  • 2 tsp ground cinnamon
  • 1 1/2 tsp gf baking powder
  • 1 tsp vanilla extract
  • To serve: sliced banana, coconut yoghurt, almond butter and maple syrup

Directions

1. Blend all ingredients until smooth. 2. Heat non stock pan to medium-high and pour in circles. 3. Flip when one side is cooked and bubbles appear, approx 30 seconds. Try not to overcook in order to keep them light and fluffy. 4. Serve hot!
