Mustard seeds belong to the mustard plant and are available in both the yellow and black variety. Black mustard seeds are commonly used in Indian cooking and are generally fried in oil for about 2-5 (stirring constantly) before adding to curries to help release the flavour. Black mustard seeds are high in minerals such as iron, magnesium and omega 3 fatty acids. Store in an airtight container in a cool and dry place.
