Easy Peasy Pickles

You can pickle anything from cucumbers, raddish, carrots and more!


Ingredients
  • Pickling spice mix
  • 1 1/2 tbsp celery seeds
  • 1 crushed cinnamon quill
  • 1 tbsp yellow mustard seeds
  • 2 crushed bay leaves
  • 1 tbsp yellow mustard seeds
  • 1 tbsp black mustard seeds
  • 1/2 tsp whole cloves
  • 1 1/2 tbsp coriander seeds
  • 1 tsp dried ginger pieces
  • 1/2 tsp chilli flakes
  • 2 tsp black peppercorns
  • 2 tsp mixed peppercorns
  • 1/2 tsp fennel seeds
  • 1 tsp juniper berries
  • Pickle ingredients
  • 4 small cucumbers
  • 3/4 cup white balsamic or white vinegar
  • 1 1/2 cups filtered water
  • 1 tbsp fine himalayan salt
  • 2 cloves of garlic
  • 1 heaped tsp of pickling spice mix

Directions

Whisk together the salt and vinegar in a bowl. Slice your cucumbers and place them in a large jar with the garlic. Add 1 heaped tsp of your pickling spice mix, top with the vinegar and finally the water. Close the lid and place in the fridge for at least 8 hours. The rest of the spice mix can be stored in a jar in the pantry for future pickles.
