They are very versatile whether added to curries, soups, salads or a lovely side dish and make for an excellent pantry staple. To cook, rinse the lentils first and cook in 4 times the amount of water to lentils. Let simmer in a pot until soft and tender, about 20-25 minutes and then drain the excess water. Store dried lentils in an airtight container and keep in a cool, dry place.
