They are a delicious high protein and high fibre snack that you can keep in your cupboard for your afternoon nibbles or add on top of your favourite salads. Cover your green lentils in water and soak overnight. Preheat oven to 160°C. Drain the lentils and combine with your spices. Generously drizzle with olive oil and spread out on a lined baking sheet. Roast for 20 minutes or until golden and crunchy. Enjoy as a snack on its own or in salads.
