Rapadura, also known as panela sugar is a non-refined sugar. The pure and nutritious juice is pressed from the sugar cane, then evaporated under low heat and ground to produce a grainy sugar. It has not been cooked at high heats and the molasses has not been separated from the sugar. It is the most naturally produced cane sugar for cooking and baking. Store in an airtight container and keep in a cool, dry place.
