Black Sesame Banana Bread

A soft banana bread with a lovely nutty flavour.


Ingredients
  • 5 over ripe bananas
  • 2 free range eggs or chia eggs (1 tbsp chia with 3 tbs warm water let sit for 5 mins, per 1 egg)
  • 165g gluten free plain flour
  • 65g black sesame flour
  • 50g coconut, rapadura, or maple sugar
  • 1/2 cup olive oil
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 1/2 tsp baking powder
  • 1/4 tsp fine himalayan salt

Directions

First preheat oven to 180C and line a loaf tin. Then blend the bananas and eggs until well combined. Add gf flour, black sesame flour, coconut sugar, olive oil, vanilla extract, baking powder, cinnamon, nutmeg and Himalayan salt. Blend on high for approx 2 mins until nice and smooth. Then pour into your lined tin, top with whatever you like such as a sliced banana, cacao nibs, wattleseed or shredded coconut and bake for 40 mins until skewer comes out clean. Allow to cool on wire rack. Enjoy fresh or toasted.
