Pine nuts are a rare and delicious delicacy. They come from pine cones and each cone can take between 18 months to 3 years to ripen and develop and once ready to harvest there is only a 10-day window to collect the nuts at the right stage. The cones are all picked and separated by hand which takes a lot of time. Thankfully, a little goes a long way and they have a lovely aroma and strong flavour. They are an excellent source of vitamin E, a powerful anti-oxidant and concentrated superoxide. They are classically added to salads or pasta and can be gently toasted on a dry pan to add more crunch. They can also be used to make a wonderful pesto sauce. Store in an airtight container and keep in a cool, dry place.
