These chickpea flatbreads are inspired by a popular French street food called Socca that is often enjoyed as an appetiser. Its simple ingredients mean that it is the perfect go-to for everything from wraps, to serve with curries and soups or just to eat on their own as a snack.
Add all ingredients into a bowl and whisk until thoroughly combined. Once combined let sit for 30 minutes for the flour to absorb all the water. Pour 2-3 tbsp of mixture in a pan oiled with ghee or olive oil and cook on medium-high heat for 1-2 minutes on each side. Serve topped with za’atar and olive oil or with your favourite curries
