Gingernut Cookies

Pair your afternoon tea with one of these delicious gingernut cookies by Georgia @ge.healthy. These are super easy to make, just throw your ingredients into a blender and bake away! The delicious combo of ginger and cinnamon make them the perfect winter treat. Georgia is a 23-year-old Teacher from the Eastern Suburbs in Sydney. Ingredients
  • 1 1/2 cups rolled oats
  • 1/2 cup shredded coconut
  • 1/2 cup almond meal
  • 1 tsp ground cinnamon
  • 1 1/2 - 2 tsp ground ginger
  • 3 1/2 tbsp coconut oil
  • 2 tbsp manuka honey
  • 1 tsp vanilla extract

Directions

Preheat oven to 150°C Combine oats, coconut, almond meal, ginger & cinnamon in a blender or food processor Add the oil, honey & vanilla and blend until combined (about 10-15 second) Spoon out tablespoons of the mixture, roll into balls and flatten on a lined baking tray. Bake for 20 minutes or until golden on the outside Let cookies cool and drizzle with melted dark chocolate Store in an airtight container in the fridge
