Lupin Crumpets

This is a special recipe that the family will love. When you get bored of pancakes, which is hard, or if you just want to mix things up and try something different, give this a go. Lupin is really high in protein making it great pre or post workout.


Ingredients
  • 1 cup lupin flakes
  • 1 cup tapioka flour
  • 1 3/4 cups water
  • 1 tsp baking powder
  • 1/4 cup maple or coconut sugar
  • 1 tsp vanilla extract

Directions

To make lupin flour, blend lupin flakes until you have a fine crumb, the finer the better. Add lupin and tapioca flour to a bowl and whisk in the water. Leave in fridge overnight to thicken. In the morning simply whisk in the remaining ingredients and heat non stick pan to high. Add a little coconut oil before pouring in the batter like pancakes. Flip when golden.
