Steel cut oats are very minimally processed retaining more of their natural goodness and healthy source of fibre. These oats create a more textured bowl of creamy porridge oats that can be enjoyed both sweet or savoury.
In order to reduce cooking time you can soak the oats overnight in 2 cups of water and then just add milk and a pinch of salt and cook until soft. For extra flavour we like to toast the oats first, so add unsoaked oats to a pot on medium heat with the coconut oil and stir continuously until toasted and fragrant. Then add the milk, 2 cups of water and a pinch of sea salt. Bring to the boil and then simmer until tender and creamy. Some like it chewy and some prefer very tender, so continue to cook until you are happy with the texture. Serve with anything you like, we like a sprinkle of cinnamon, a drizzle of honey and some berries or chia jam.
