Carrot Tacos

A healthy taco shell made from carrots!

  • 2 cups of grated carrot
  • 2/3 cup tapioka flour
  • 2/3 cup almond meal
  • 2/3 cup water
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp nutritional yeast
  • 1 tbsp grated parmesan cheese


Preheat oven to 180C. Grate the carrots and squeeze out any extra liquid from the carrots and set aside. Whisk together all the remaining ingredients before adding the carrots and mixing well. Line 2 baking trays with baking paper. Spoon your mix onto the trays and spread into thin circles. Bake for 20mins, flip, and cook for a further 10 mins checking them to make sure they don’t burn. Serve hot.
