Can't go wrong with a healthy chocolate chip cookie.
Preheat oven to 175C. Whisk the semi melted coconut oil, coconut sugar, egg and vanilla until creamy and combined. Add tigernut flour, baking powder and sea salt and mix well. Fold in the chopped dark chocolate or chips. Roll dough into golf ball size, then flatten on a lined baking tray into cookie shapes. Bake for 10-12 mins until slightly golden. Allow the cookies to cool for 10 mins on tray before transferring to a cooling rack.
