Lupin Flake Granola

This granola is a simple and easy way to add an extra hit of protein and healthy fats to your breakfast! Lupin flakes are a great gluten-free alternative to cereals that are high in fibre and protein to keep you full throughout the morning. The delicious spices and maple syrup add a delicious flavour and is perfect paired with yoghurt or oats.

Ingredients
  • 1/2 cup lupin flakes
  • 1/2 cup pepitas
  • 1/2 cup sunflower seeds
  • 1 cup shredded coconut
  • 1 cup multi-grain puffs
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/4 tsp nutmeg
  • 2 tbsp maple syrup
  • 1/3 cup melted coconut oil

Directions

Preheat oven to 150°C Combine all dry ingredients together in a bowl. Add in maple syrup and coconut oil and stir to coat all ingredients. Bake in the oven for 15-20 minutes, tossing through halfway. Add to a bowl and serve with fresh berries and milk or yoghurt. Store in an airtight container for up to 2 weeks in your pantry.
