Pumpkin Cinnamon Waffles

The perfect weekend brunch recipe, waffles are always a hit! These are completely gluten-free with pumpkin and cinnamon to add some sweetness without the added sugar. You could also use the batter to make pancakes if you don't have a waffle iron.

Ingredients
  • 1/2 cup steamed pumpkin blended until smooth
  • 1/2 cup cassava flour
  • 1/4 cup almond meal
  • 2 tbsp coconut oil
  • 1 cup milk of your choice
  • 2 eggs
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch of sea salt

Directions

1. Preheat the waffle iron 2. In a bowl combine all the wet ingredients and whisk 3. In a separate bowl mix together the dry ingredients and then add to the wet ingredients. Combine until smooth 4.
