An amazingly easy dish that's full of goodness.
Cook your egg until soft or hard boiled, however you prefer it. Then cook soba according to instructions. 1 minute before they are done, throw in the peas and greens, but not the spinach, and blanch. Strain everything and rinse. Peel you egg and prepare your sauce by stirring all ingredients together. Dress your noodles and greens with the sauce and fresh spinach. Top with your egg, sesame and crushed tamari almonds or garnishes of your choice.
