Ingredients
  • 400ml luke warm water
  • 1 tsp sugar
  • 1 tsp instant yeast
  • 1 tsp salt
  • 470g wheat flour
  • 4 tbsp olive oil
  • more olive oil for the baking dish and as topping

Directions

1. Combine the warm water, yeast and sugar in a small bowl and let sit for 5 minutes until it begins to get foamy. 2. Combine all dry ingredients in a large mixing bowl. Pour in the yeast mixture and combine. 3. Pour olive oil into another clean mixing bowl, pour in the dough and coat completely in olive oil. 4. Allow dough to rise for 4-12 hours 5. Fold in the four corners of the focaccia dough, flip the dough over and place it into a baking dish. 6. Gently press and pull the dough to fit the baking dish (don’t worry too much, the dough will rise to mould the baking tray). Allow to rise for another 45mins-4 hours. 7. Dimple the dough, by pressing through it with your finger tips. Sprinkle with dried rosemary and olives and generously drizzle with olive oil. 8. Cook for 20 mins at 200 degrees Celsius 9. Serve & enjoy! We recommend combing olive oil and balsamic vinegar and dipping the focaccia
