Chocolate & Peanut Butter Chia Mousse

Makes an amazing healthy dessert or you could even have this for breakfast.


Ingredients
  • 1 1/2 cups nut milk of choice
  • 5 medjool dates
  • 4 tbsp chia seeds
  • 4 tbsp cocoa powder or raw cacao
  • 1/4 cup peanut butter
  • 1/2 tsp vanilla extract
  • some roasted peanuts to serve

Directions

Blend all ingredients together, scraping down sides and blending again until smooth. You can allow ingredients to soak for 15 mins before blending as this helps if you don’t have a powerful food processor. Eat immediately or set in fridge in glasses or jars. Serve with roasted peanuts, fresh fruit, chia jam, muesli or anything you prefer.
