Fish Burgers With Zucchini Fries

Amazingly crunchy lupin crusted zucchini fries are a must! Can be used with any other vegetable too!


Ingredients
  • For zucchini fries
  • 4 zucchinis cut into chunchy fry sizes
  • 1 cup tapioka flour
  • 1 cup lupin flakes (pre blended into a flour)
  • 2 cups water
  • 1 tsp himalayan sea salt and a crack of pepper
  • For the fish patties
  • 250g of fresh white fish (blended into mince at home)
  • 1/4 cup grated zucchini
  • 1/4 cup chopped parsley
  • 1/4 cup almond meal
  • 2 chopped spring onions
  • the zest of one lemon
  • 1 chopped red chilli
  • 10 chopped sage leaves
  • 2 tsp kelp flakes or dulse flakes (optional)
  • 2 tsp flaxseed meal
  • 1 tbsp olive oil
  • a pinch of salt and pepper

Directions

Preheat the oven to 190C. Blend the lupin flakes into a high speed blender to make them as fine as you can. Then add the water, tapioka and salt and blend. dip each peice of zucchini into the batter and put onto a lined baking tray. Drizzle with olive oil and cook until golden. Then flip until the other side is also golden. For the burgers, first grind white fish in blender into a mince. Then add to a bowl and mix with all other fish patty ingredients. Mix well with your hands and then shape into burgers. Fry on a medium heat with a bit of olive oil for about 2 mins on either side. Then serve with your choice of bun and fillings.
