This rolled ancient grain can be cooked in a similar way to porridge or used as a crumb for meats and vegetables. Quinoa is high in protein and one of the few plant foods that contain all nine essential amino acids. It is high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and many beneficial antioxidants. It has a lovely nutty flavour and is great for those on a gluten-free diet. Store in an airtight container and keep in a cool, dry place.
