Teff has some similar qualities to a grain however it is not a grain at all and is in fact the seed of a grass. Teff is very high in protein, fibre, zinc, vitamin B6, calcium and vitamin C, making great for overall health and immunity. It has a lovely nutty flavour. It can be used to make a fantastic gluten-free porridge on its own or together with rolled oats. It can also be used in toasted granola or cookies or even to crumb fish, chicken or vegetables instead of breadcrumbs for a nutritious alternative. Store in an airtight container and keep in a cool, dry place.
